How one can avoid making a lot errors when making calculations

My mother is a business woman, she owns a chain of restaurants and she single handedly runs them. She does a good job at that, she is the most hardworking person that I have ever come across. There is a time she started having dizzy spells and I took her to get checked and they found a tumor that was benign in her brain. It was not spreading or anything, it was just affecting that part of the brain that it was growing on. Due to that she had to undergo an operation so that they can take it out. When she was in hospital, she asked me to run her restaurants for her. I had to make sure that all the employees reported to work on time. Had also to ensure that at the end of the day, I calculate all the income gotten and then take it to the bank. She had told me that it was not a hard process. I should just use exel formulas to make the calculations. With the formulas, it was very unlikely that I was going to have an error as long as the formula was put right.
